It is very rare to find hotels and handloom food stalls where these are not available, especially in rural areas of Tamil Nadu. Chettinad Style Mutton Chukka Recipe

Ingredients for making Chettinad Style Mutton Chukkah
- 1/2 kg mutton
- 10 to 15 small onions
- 3 cloves garlic
- 1 piece ginger
- 1 tablespoon pepper
- 1 tablespoon cumin
- 1 tablespoon coriander
- 1/2 tablespoon garam masala
- 1/4 tablespoon turmeric powder
- 3 cannabis chillies
- A little coriander
- A little caraway
- The required amount of chilli powder
- The required amount of oil
- Salt as needed
Chettinad Style Mutton Chukka Recipe
- First clean and wash the mutton well, chop the onion lengthwise, and make the ginger garlic paste.
- Next put a cooker in the oven over medium heat and pour a tablespoon of oil into it and heat the oil.
- Once the oil is cooked, lower the oven completely, add the ginger garlic paste we have made and fry it with turmeric powder.
- Then add the mutton we have washed and mix it well with the ginger garlic paste. Stir for about a minute and then put the oven on medium heat.
- After a minute put the lid on the cooker and let the mutton cook for about 5 minutes.
- After 5 minutes open the lid and the mutton will be well drained of water with which we add a quarter cup of water, the required amount of salt, and chilli powder to his liking and cover again and let it boil for about 15 minutes.
- We are going to speed up the mutton again so even if the mutton is 90 percent hot enough.
- Put a pan in the oven over medium heat until the mutton is cooked, add the pepper, cumin, coriander, and cannabis pepper and fry until it smells good.
- Then let it cool for a while then transfer it to a mixing jar and grind well.
- If you leave the oven all on after 15 minutes and open the lid of the cooker you will see that the mutton is 90 percent hot and the water is just right. (If there is a lot of water, take it apart and keep it in a container.)
- Now put a pan in the oven on medium heat and pour about 2 tablespoons of oil in it and heat the oil.
- Once the oil is cooked, put the chopped onion in it and fry it till the onion becomes glassy.
- When the onion comes to the glass, add a little caraway, a cannabis chilli, and the mutton we keep boiling and stir well and let it boil.
- If you have a lot of water and keep it in a separate container, add it now.
- Then sprinkle the garam masala and the spices we have grinded in it, stir well, cover and lower the oven completely and let it cook for about 8 to 10 minutes.
- After 10 minutes open the lid and sprinkle a little coriander in it, remove from the oven with a fork and serve hot.
